										<content:encoded><![CDATA[<p>Ceviche or Cebiche (even Seviche or Sebiche in some areas), is a typical marine dish from the coast that waters the Pacific Ocean, which in its Peruvian version (the most famous) combines raw fish marinated in lemon, with minced chili pepper, cilantro, sliced ​​onion and canchita serrana, choclo (corn) and sweet potato (sweet potato or sweet potato) as accompaniments.</p>



<p>The importance given to ceviche in Peru is such that it has been declared a Cultural Heritage of the Nation and has been chosen by Peruvians as the dish that most defines the country. Although ceviche can be found in countries such as Chile, Colombia, Ecuador, Costa Rica, Honduras or Mexico, some renowned chefs such as the architect of the Bully, the Spanish Ferrán Adriá, have mentioned that ceviche belongs historically and culturally to Peru.</p>



<p>The fish used in this flag dish are usually sole, grouper, bonito, tollo, parakeet, trout (mainly in the sierra area), or the most economical of silverside. In addition to the classic ceviche or fish ceviche, there are other variants such as mixed ceviche (with fish and shellfish); black shell ceviche (dark in color due to the addition of these shells, which also give it an aphrodisiac effect); shrimp ceviche (typical in the Arequipa region); octopus ceviche; Chiringuito (typical dish from the north coast of the country, Piura, based on dried guitar meat -a spice of ray- marinated in lemon and chili pepper); Amazonian ceviche (variant of the Peruvian jungle with river fish such as paiche, Amazonian dorado, corvina, catfish, or maiden).</p>

In some recipes, parmesan and pecans (a kind of dried fruit similar to walnuts) are also added to the chili cream, which gives it a more intense flavor.<br>A good Peruvian friend tells me that her grandmother prepares a variant of this dish called &#8220;ají de tuna&#8221;, which she still cannot find in any restaurant, but it has already been promised! The growing fame of Cusco as a &#8216;starting point&#8217; before knowing the surroundings such as Sacsayhumán, the Sacred Valley, starting the walk from Ollantaytambo to the spectacular Inca Trail, or to rest before going to one of the 7 Wonders of the Modern World: the Machu Picchu, made it become a catalyst for the economy of the area, attracting dozens of restaurants, pubs, tour operators, exclusive hotels, among others.</p><p>To give you an idea. From 2007 to 2016, the city&#8217;s population practically doubled, from 255,000 to 434,000 inhabitants. What is the negative of this? That perhaps this saturation has made some tourists not take it as an option when looking for an intimate experience. Machu Picchu, for example, has had to tighten its access rules to avoid damage to the monument and separate the arrival of tourists into morning and afternoon shifts.</p><p>Even so, the Imperial City that was the capital of the Tahuantinsuyo (territory that included the Inca Empire) is a wonder declared in 1983 as a Cultural Heritage of Humanity. Its streets keep the best of Inca architecture and its steep streets are full of the best of viceregal art. The ancestral culture struggles to prevail, so much so that it is not difficult to observe ladies in skirts and bowlers carrying flames on a leash while exchanging words in Quechua, or women who sell chullos and coca leaves to avoid altitude sickness.</p><p>That struggle to maintain the Inca culture of their ancestors and honor the last emperor judged by Pizarro (the Inca Atahualpa), is still alive in the Inti Raymi, a celebration that recreates the beginning of the winter solstice every June 24 and that is quite a event for local citizens and tourists.</p></div></div>
